Mushrooms are good for only one thing and that's tripping.
Marinating mushrooms overnight is waste of time because they almost do not absorb water spices etc.

Great content, at 22:42, he compares fish to other mammals. Fish are not mammals. They breathe through gills and are cold-blooded. Their skin is smooth and can be covered in scales, and they hatch from eggs. None of them have fur either.

He removed the fat cap ans cut againat the grain 🤦. That is where all the flavour is. There is an easier way to do this. Buy just the top sirloin caps with the fat cap still on them, and cut 1.5" "striploins" with the grain. They come pre de skinned but keep a 1/2 inch far cap on them. This the best cut of the pacanha, you can either roll them and skewer them end to end then rotisserie q them brazilian resturant style or leave them in strips and bbq sear reverse sear them to rare perfection. Expert tip season with kosher salt and pepercorn 12 hours before cooking, 1 hour prior, toss them in a blended pineapple, or orange tenderizing brine... Rinse pat dry and re season then rest prior to cooking sear the fat cap to render it and let the steak rest for 2 minutes, then cook the steaks on their sides in indirect heat. Finally, finish sear them at high heat on a q or in a cast iron pan. And baste with butter and thyme. They are honestly the most underrated cut of steak on the market. They have the texture of a fillet, but the taste of a strip. Look for high marbling. These steaks will blow your mind.
